Default 75 deville oil pressure

Hello everyone, I am new to this forum. I just bought a 75 cadillac deville that has been setup to race at the local circle track. Really. I paid $500 the car had been sitting for 2 years. Put in a new battery, starter, plugs drained fuel(replaced w/91) changed oil(10-w40 correct?), filter, put air in tires, primed the carb and hit the switch. WOW! It started right up.
I let it idle for 10 minutes no smoke, leaks or sputtering. Sounds good.
Tranny fluid good.
I am no mechanic, just nuts.
Here are my questions.
1. The oil pressure reads 100lbs when idling, is this ok?
2. Correct engine oil needed? engine is the 500.
3. Racing division is stock economy class. No modification to engine allowed. What would you do next?

Quick note is oil pressure is double what it should be
Something is stuck in the pump

Thanks for the reply. Had it running today, oil pressure dropped and held at 35lbs. Maybe the gauge was stuck. Added racing harness, I'm almost ready.
Ran it up the street, she runs strong.
Rules at the track say no coolent, water only. I'm a bit worried of over heating. I'm in Vegas. 2 weeks from first race, might make it. But now I have a small power steering fluid leak.

Water cools better than coolant - coolant only raises the boiling point. Make sure you have a good cap and no leaks in the cooling system. I'd run one of the 20lb caps
